Nothing in the rule book defines an adventurer. I'm guessing anything that is not a monster, so Half Orcs, halflings, Paladins, etc ?

Adventurers are characters with the experience ability. We updated the digital version of the Battle for Faerûn rules to reflect this.

is "Minsc and Boo" and adventurer since they gain experience tokens? (even though it doesn't have the "experience" keyword)

Minsc and Boo is not an adventurer.
