Wave 0 - Starter - Antimatter Mines

Can Evade tokens be spent to avoid damage from minefields?

"Attack: Discard this card and place a Minefield Token in your rear firing arc at Range 1. If you place this token on a ship, or if a ship enters the minefield, roll 4 attack dice. Any [DAMAGE] or [CRITICAL] damages the ship as normal. The affected ship does not roll any defense dice."

No, as stated in the FAQ. When you drop a minefield directly on top of another ship it is a special form of attack that does not follow the normal rules of the Combat Phase.

You cannot use Target Lock or Battle Stations tokens to modify the attack dice (and your opponent cannot use Evade tokens to cancel hits).

If you had a scan beside your ship and Mr. Spock on your ship when you dropped the mines your would be able to modify the dice as Mr. Spock's ability is continuous and does not require activation.

What if the ship is able to roll defense dice against minefields, (e.g. with multi-adaptive shields, navigational deflector) can you modify these defense dice?

Only with continuous effects. You would not be able to spend Evade Tokens or use other cards which work during the Modify Defense Dice step of the Attack Phase.
