The Val Jean's special ability is that "During the Modify Defense Dice step of the Combat Phase, you may disable up to 3 of your Upgrades to add 1 [EVADE] result to your roll for each Upgrade you disabled with this card."

My question is does this change the result of the rolled dice, or does this add an [EVADE] to the total. So if I rolled 3 defense dice and got 3 [EVADE]s could I then use the ability to have up to 6 [EVADE] results?

The Val Jean adds Evade results. So you could potentially have 6 [EVADE] results if you rolled 3 defense dice.
