If I have a CAA 002 Iron Man on my starting force can I include another CAA 002 Iron Man on my Sideline to choose powers from?

No. Iron Man's effect only allows you to choose powers from characters you chose to be replacements for the "Shifting Focus: I Am Iron Man" trait. Since you can't replace a character with a copy of itself, you would not have been able to include another 002 Iron Man for the effect.
